Peijnenburg gluten-free breakfast cake – a christmas dream

For some people, breakfast cake belongs to the unknown things. While others consider it their favorite food and treat in the morning. They would would never imagine one without. On a trip to the Netherlands, I discovered a gluten-free breakfast cake with christmast-y gingerbread flavor at Albert Heijn.

Unique, moist, delicious gluten-free breakfast cake

This surprisingly tender, gluten-free breakfast cake smells and tastes of Peijnenburg’s unique gingerbread spice blend. It makes me think of Christmas immediately. The cake is moist and firm and can be spread with butter or eaten plain. Both versions taste super delicious!

Peijnenburg seems to be a traditional Dutch company. Unfortunately I don’t speak Dutch to verify this. But if you do speak Dutch, you can find more information about the company here. On the same trip, by the way, I discovered the long-lost and much-loved gluten-free Stroopwaffels at Albert Heijn.

Ingredients

Invert sugar, corn starch, sugar, stabilizer (glycerin), modified potato starch, LUPINE protein concentrate, whey protein concentrate (MILK), spices raising agents, (sodium hydrogen carbonate, disodium diphosphate), sunflower oil, rice flour, thickener (xanthan gum).
