Gnocchi al Limone

I love gnocchi, always have. But after I switched to a diet without gluten, I liked them even more. Why? Their consistency, many possible combinations and the short preparation time of gluten-free gnocchi are great. I like the gnocchi of the brand “alnavit”. You can get them at Rossmann.

Summer Treat

The meal “Gnocchi al Limone” is perfect for summer, fresh and the capers and lemon add an extra kick. Of course, you can also leave them out if you don’t like them, just like the arugula salad.

Fresh lemons are a wonderful summer fruit to cook gluten-free gnocchi with.

Italian gnocchi

Original Italian gnocchi is usually made with wheat flour to achieve an appropriately sticky consistency. This means that I would never order them in a restaurant. You should also pay attention when buying them and read the ingredient list carefully. Consider using an organic lemon for this dish as we also use the zest for this meal.

The ingredients are for two people:

  • 100 g butter (room warm)
  • 1 large organic lemon
  • 1-2 cloves of garlic to taste
  • 1000 g gnocchi
  • 6 teaspoons of pickled capers
  • 100 g arugula
  • 60 g grated Parmesan cheese (bought ready-made, or grate it yourself)
  • salt and fresh pepper
  • chili flakes
  • 2 TBSP OIL
Olive oil makes a great oil to brown your gluten-free gnocchi in.

Here are your step by step instructions:

  1. Peel the garlic, remove the inside and chop into small pieces.
  2. Briefly wash and dry the lemon. Remove the lemon peel with a grater (be careful not to grate the white). Then squeeze the lemon. 
  3. Mix the room-tempered and soft butter in a bowl with the grated lemon peel, the juice of the lemon and the finely chopped garlic clove. The easiest way to mash everything is with a fork.
  4. Heat 2 tablespoons of olive oil in a skillet and sauté the gnocchi over medium heat for 2 to 3 minutes. Personal preference, of course, but it’s delicious when they turn a toasted golden-brown colour.
  5. Add the homemade lemon butter to the pan as well and spread.
  6. Following, mix in the capers and parmesan, if desired arugula goes very well with this and provides nice nutty notes. 
  7. Season to taste with salt and freshly ground pepper. 
  8. Serve on the plates with freshly grated parmesan.
  9. Enjoy your meal!
